...Nakahara vinegar from Sagami, Zentokuji vinegar from Suruga, Fushimi vinegar from Yamashiro, Handa vinegar from Owari, Kokawa vinegar from Kii, and Hyogo vinegar from Settsu, all of which were based on the Izumi vinegar method with some ingenuity added to it. According to the Bankin Sugiwaibukuro (1732), Kitakaze vinegar was considered the best vinegar in Edo, and around the Keian period (1648-52), the price tag of a liquor store in Edo listed 1 sho of vinegar at 48 mon per sho compared to 28 mon per sho for Owari vinegar, which was the name for the Hyogo vinegar from Settsu. There are several sources on vinegar-making, including the Yoshufushi (1684), but the article in the Honchokkan (1697) is more detailed.
