Cultivated yams are 70-80% starch by dry weight, and are an important staple food in potato-farming areas, and also an important starch source for hunter-gatherers. Many yams, such as Ouyakushi (originally known as Cashuimo), Shiyoriyo ( D. cirrhosa Lour.), and Nagaimo (Chinese yam), are used in traditional Chinese medicine, and sapogenin extracted from D. mexicana and other species grown in Central America is used as a raw material for producing steroid hormones such as progesterone and cortisone. The rhizomes, which contain a large amount of saponin, are also crushed and used for laundry and for deworming lice.

　栽培ヤマノイモ類は乾物重量の70～80％がデンプンで，いも農耕地帯では重要な主食とされるし，狩猟採集民にとっても大切なデンプン源植物であった。　漢方薬では黄薬子（おうやくし）(原植物カシュウイモ)，薯良（しよりよう）(ソメモノイモD.cirrhosa Lour.)，山薬(ナガイモ)など多くのヤマノイモ類が利用されているし，またステロイド系ホルモンのプロゲステロンやコーチゾンなどの生産の原料として中米産のD.mexicanaやその他の種から抽出されるサポゲニンが利用されている。またサポニンを多量に含む根茎をつき砕き，洗濯や，シラミなどの駆虫に利用することもあった。…
