...Several fish are lined up and their eyes are pierced with bamboo or straw. Those with the gills pierced are called gill piercing or cheek piercing. The name me-sashi has existed since the Muromachi period, and it was made with icefish, minnows, and crucian carp, among others, and some were simply dried.
