In Europe, escargots were also eaten during the Roman period, and edible snails were introduced to various parts of Europe by the Romans. Escargot cuisine developed in France and became established in the 17th and 18th centuries. In the 20th century, escargots became synonymous with French cuisine, along with foie gras, and began to be enjoyed in Western countries.
