Sardine seller - Iwashiuri

...The head is cut off with a knife, the belly is cut open with the fingertips, the backbone and intestines are removed, and the fish is washed with vinegar and eaten with wasabi soy sauce. Sardine sellers, who were called "Iwashi-koi" or similar, were commonly seen in Tokyo until around World War II. The protagonist of the Otogi-zoshi story Saru-genji-zoshi is set as a sardine seller from Ise, and according to the Honcho Shokan, many sardine sellers seen in Kyoto in the early Edo period were from Kishiwada (Osaka Prefecture) and Kuwana (Mie Prefecture).
