An evergreen perennial plant of the Arrowroot family (APG classification: Arrowroot family). Its Japanese name is kuzuukon (kuzu ukon), and it is also called western indoor arrowroot. The leaves are rounded, elongated triangles, about 30 cm long. They have long petioles, and many leaves grow from the ground in bundles. The flower stalk grows to about 2 meters, and small white three-petaled flowers bloom. The swollen underground stems produce fine, high-quality starch. It is easy to digest, making it ideal for feeding sick people and infants, and is used in sweets and cooking. It is native to the tropical regions of South America. It is cultivated in tropical areas, mainly in the West Indies, for starch extraction and as food by local people. There are several other plants called arrowroot, such as Queensland arrowroot (Canna edulis) of the Canna family and Eastern indoor arrowroot (Hosobaukon) of the Zingiberaceae family, and all of them extract starch from underground rhizomes.
