American ground potato - American ground potato (English spelling)

A perennial plant of the legume family (APG classification: Fabaceae). Also called American Hodo or Apios. The stems are creeping and reach 2-4 meters. The leaves are pinnately compound with 5-7 leaflets. In summer, the flower stalks emerge from the leaf axils and produce 10-13 butterfly-shaped flowers. The flowers are about 1 cm long, reddish purple or pale purple, and fragrant. The tubers, which are 3-6 cm long and 2-4 cm wide, grow underground in a string like beads, and are edible. Native to North America, it was cultivated by Native Americans in the northeastern United States, from Florida to Texas. It was introduced to Japan in the mid-Meiji period and was cultivated mainly for its ornamental flowers. It is currently cultivated for food in the eastern and southern parts of Aomori Prefecture. The closely related Hodo potato is distributed from Hokkaido to Kyushu, and this potato is also edible.
