...The north, especially the Punjab region, has long been a producer of high-quality wheat, and there are many different types of bread. Among them, the most common are chapati, an unleavened thin bread made from whole wheat flour called aata and baked on a hot plate, and poori, made from the same dough and deep-fried in oil. There are many variations of each, with fillings kneaded into them or wrapped in them.
