N - L -α-aspartyl- L -phenylalanine 1-methyl ester. _{C 14} H ₁₈ N ₂ O ₅ (294.31). Dipeptide of L -aspartic acid and L -phenylalanine. Colorless, odorless crystals. Melting point 246-247 °C. -2.3° (1 mol L ^-1 hydrochloric acid solution). p K _a1 3.70±0.10, p K _a2 7.70±0.39. Soluble in water. Known as an artificial sweetener, its sweetness is 160 times that of sucrose. [CAS 22839-47-0]
