Akabori Kappo School

...To be worn over a kimono, the sleeves are loose, the cuffs are tight, and the strings are tied at the back. It was invented at the Akabori Kappo School (now the Akabori Cooking Academy), which was first established in 1882 in Nihonbashi, Tokyo. The school was established to spread cooking techniques and nutritional knowledge to households, and also served as a salon for upper-class women who commuted by rickshaw.

The custom of accurately measuring ingredients before cooking is said to have been first attempted in Japan at the Akabori Kappo School (founded in 1882), a pioneering culinary school.
