It is made by pounding or crushing the New Year's Kagami mochi. Later, the name also came to be used for thinly sliced mochi shaped like sea cucumbers. The same mochi cut into small cubes is called arare mochi (arare), and by the beginning of the Edo period, the custom of making mochi specifically for kakimochi or arare mochi had become established. According to the Yoshu Fuzhi, the mochi made at Anyoji and Sorinji temples in Maruyama, Kyoto, was famous as Maruyama kakimochi. It was made by pounding the mochi in the harsh winter, slicing it thinly when it was half-dry, and drying it in the shade, and it was sent far away as a local specialty. 正月の鏡餅をかいたり砕いたりしたもの。のちには,ナマコ形などにつくった餅を薄く切ったものをもこの名で呼ぶようになった。同じ餅を小さなさいの目に切ったのが霰餅(あられもち∥あられ)で,江戸時代初頭にははじめからかき餅や霰餅にするための餅をつくる風が定着していた。《雍州(ようしゆう)府志》によれば,京都円山の安養寺,双林寺などでつくるものは〈円山欠餅(まるやまかきもち)〉として著名であった。それは厳冬の間に餅をつき,半乾きになったところで薄く切って陰干しにしたもので,名物として遠方へも送られたという。
