...Famous vegetable markets in the early modern period were Tenma in Osaka, Yaoyacho in Kyoto, Biwajima in Nagoya, and the three famous vegetable markets in Edo: Kanda, Senju, and Komagome. Regarding the establishment of vegetable wholesalers, the wholesaler at the Edo Honjo Yotsume vegetable market said that it started out as a water teahouse that provided hot tea to local farmers who brought their vegetable loads to the market, and was entrusted by the shippers to sell the vegetable loads, and gradually grew to be called a wholesaler. Similarly, the vegetable wholesaler at Edo Nakanogo Takemachi said that it started out as a water teahouse with a reed mat at the ferry dock that began to sell vegetable loads on commission. These examples explain the process by which vegetable wholesalers were established, and also show the process by which vegetable markets were established. ...

…近世には大坂の天満，京都の八百屋町，名古屋の枇杷島の青物市場，江戸では三場所といわれた神田，千住，駒込の青物市場が著名である。　青物問屋の成立について，江戸本所四ッ目の青物市場の問屋は，はじめは野菜類の荷物を市に持ち出す近在の農民に湯茶を提供する水茶屋が荷主から野菜荷の売りさばきを委託され，しだいに成長して問屋と名のるようになったと伝え，同じく江戸中之郷竹町の青物問屋は，渡船場にあった葭簀（よしず）張りの水茶屋が野菜荷の委託を受けて販売するようになったのがはじまりであると伝えている。このような例は青物問屋の成立過程を説明するものであるとともに，青物市が成立する過程をも示しているものと言えよう。…
