McIlhenny, E.

...It is a spicy seasoning made mainly from Mexican hot peppers, Tabasco peppers, and is a product of the American McIlhenny Co. (founded in 1868). It is said that it was commercialized when Edmund McIlhenny, a banker known as a gourmet, lost his assets in the Civil War and made a sauce using the few chilies remaining in his field to enjoy with his meals.
