From the mid-19th century onwards, large-scale hotels began to be built in Europe and America. Among these, the Swiss hotelier César Ritz (1850-1918) and the French chef Georges Auguste Escoffier (1846-1935) were two people who had a decisive influence on the future of luxury hotels. Ritz left a rural area of ​​Switzerland for Paris, where he started out as a waiter in a restaurant, and soon became a man who entertained kings, nobles and newly wealthy people from around the world.
