There are various types of steaks depending on the part of the beef used. The tenderloin is the most tender and has the least amount of fat. It gets thicker from the head to the hips, and the thickest part at the rear end is used to make chateaubriand, the center is used to make tournedos, and the other two ends are used to make filet mignon.
