… The understanding that enzymes are inseparable from the phenomenon of life itself gradually deepened, and the famous controversy over vitality between JF Liebig and L. Pasteur, and E. Büchner's achievement of alcoholic fermentation using cell-free extracts of yeast (1896) culminated in a deeper understanding that enzyme molecules are proteinaceous catalysts that carry out metabolism in living organisms, but conclusive evidence was not yet obtained. Meanwhile, Wilhelm Kühne (1837-1900) gave the name Enzym, derived from the Greek word meaning "something present in yeast" (1878). It was James Batcheller Sumner (1887-1955)'s successful crystallization of jack bean urease (1926) that conclusively demonstrated that enzymes are proteins. …

…　酵素はこうして生命現象そのものと決して不可分ではないという認識がしだいに深まってきたが，有名なJ.F.リービヒとL.パスツールの生気論争，またE.ブフナーによる酵母の無細胞抽出液によるアルコール発酵の達成(1896)を頂点として，酵素分子が生体内の代謝を行うタンパク質性の触媒であることへの理解が深まっていったが，決定的な証拠はまだ得られなかった。その間，キューネWilhelm Kühne(1837‐1900)は，〈酵母の中に存在するもの〉の意味するギリシア語をもとにEnzymという名を付与した(1878)。　酵素がタンパク質であることを決定的に示したのはサムナーJames Batcheller Sumner(1887‐1955)によるナタマメウレアーゼの結晶化の成功(1926)であった。…
