An enzyme preparation used in cheese production. Chymosin (formerly known as rennin), a proteolytic enzyme found in the fourth stomach of calves, is extracted and made into powder, tablets, or liquid form. Chymosin is also known as milk-clotting enzyme because of its strong milk-clotting effect. It is used to coagulate milk proteins during cheese production. In recent years, enzymes secreted by microorganisms that have the same effect have been discovered and are being put to practical use. Genetically engineered enzyme preparations have also been developed and are approved for use in the United States and Japan.
