The process of keeping food and raw materials at low temperatures to stop the growth and activity of microorganisms and slow the action of enzymes to prevent spoilage. Strictly speaking, there are three types of temperature storage: constant temperature storage (10 to 0°C), refrigeration (do not freeze below 0°C), and freezing (freezing below -15°C). Of these, constant temperature storage at 0 to 10°C is the most common, but since it cannot completely stop the activity of microorganisms and enzymes, the stored items will spoil after a certain period of time. For this reason, it can be said to be more suitable for short-term preservation than refrigeration or freezing, but the optimal storage temperature varies depending on the type of food and raw materials. Ice or dry ice is used on a small scale, but for long-term and large-scale storage, a refrigerated warehouse is used. Care must be taken with ventilation to prevent deterioration of the quality of stored items due to excessive humidity and air contamination caused by sealing.
