Lime - lime (English spelling)

An evergreen shrub or small tree of the Rutaceae family (APG classification: Rutaceae). It grows in a clumping pattern to a height of about 2 metres. The branches are delicate and numerous, with thorns. The leaves are small and have small pterygoid leaves. The flowers are small and white, either solitary or general, and bloom throughout the year. The fruit is about 4.5cm long and 4cm wide, with small papillae. The ripe fruit is yellow-green, with a thin skin that is difficult to peel. It is harvested while still green, before it ripens and turns yellow.

Its flesh is soft and juicy, with a strong acidity and a fragrant flavor, and it is used in the same way as lemons. Its delicate acidity is the best among citrus fruits. It goes particularly well with tea, vegetable and fruit salads, fries, grilled meat and fish, and is also famous for sipping its juice while drinking tequila. It is also used to make lime oil and citric acid. Native to Malaysia and India, it has spread widely throughout the tropics. It is widely cultivated in India, Sri Lanka, Mediterranean countries, and Mexico.

There are several known varieties and related species, but the thornless lime is a mutation of lime. The variety, Tahiti lime var. latifolia Tanaka, has large fruits and leaves. The closely related sweet lime C. limettioides Tanaka is native to India and is sweet with no sourness.

ミカン科(APG分類:ミカン科)の常緑低木または小高木。高さ約2メートルで叢生(そうせい)する。枝条は繊細で多数あり、刺(とげ)がある。葉は小さく、小さな翼葉がある。花は小さく白色で単生または総生し、四季を通じて開花する。果実は縦径約4.5センチメートル、横径約4センチメートル、小さな乳頭突起がある。熟果は黄緑色、果皮は薄く剥皮(はくひ)は困難である。収穫は黄熟前の緑色のうちに行う。

 肉質は柔軟多汁で、酸は強く香気があり、レモン同様に用いられる。デリケートな酸味は柑橘(かんきつ)類中随一である。紅茶、野菜、果物のサラダ、フライ、焼き肉、焼き魚などにとくにあい、またテキーラを飲みながら汁をすするのでも有名である。ライムオイル、クエン酸の原料にもなる。マレーからインドにかけて原産し、熱帯圏に広く伝わった。インド、スリランカ、地中海諸国、メキシコなどで栽培が多い。

 いくつかの変種や近縁種が知られているが、トゲナシライムは、ライムの突然変異によってできたものである。変種のタヒチライムvar. latifolia Tanakaは果実、葉ともに大きい。近縁のスイートライムC. limettioides Tanakaはインド原産で酸味がなく甘い。
