Palm wine (coconut wine) - yashizake
It is an alcoholic drink made by fermenting the sap that comes out from the cut end of the stalk of a young palm inflorescence (a flowering bud). Its alcohol content is around 4% (by volume). Examples include aem, an oil palm alcoholic drink that grows in the tropical rainforests of Africa, where there is little dry season, and toddy, an alcoholic drink from coconut palms in Sri Lanka and Malaysia. As a primitive alcoholic drink, it has a long history, and in the Song History, compiled during the Yuan dynasty, palm wine and betel nut wine are listed along with flower wine and honey wine as alcoholic drinks that do not use koji.
