Palm wine (coconut wine) - yashizake

Japanese: ヤシ酒(椰子酒) - やしざけ

It is an alcoholic drink made by fermenting the sap that comes out from the cut end of the stalk of a young palm inflorescence (a flowering bud). Its alcohol content is around 4% (by volume). Examples include aem, an oil palm alcoholic drink that grows in the tropical rainforests of Africa, where there is little dry season, and toddy, an alcoholic drink from coconut palms in Sri Lanka and Malaysia. As a primitive alcoholic drink, it has a long history, and in the Song History, compiled during the Yuan dynasty, palm wine and betel nut wine are listed along with flower wine and honey wine as alcoholic drinks that do not use koji. ヤシの若い花序(花をつける芽)の柄の切口から出る樹液を発酵させた酒。アルコール分は4％(容量百分比)前後である。乾季の少ないアフリカの熱帯雨林地帯に生えるアブラヤシの酒エーム，スリランカ，マレーシアなどのココヤシの酒トディなどがある。原始の酒としてその歴史は古く，元代に編纂された《宋史》に麴蘖（きくげつ）を用いない酒として花酒，蜜酒とともに椰子酒，檳榔（びんろう）酒の名があげられている。【菅間誠之助】
