A type of sauce that is mainly used at the table. It was first made in the Worcestershire region of England around 1850, by stewing onions, carrots, celery and other vegetables, adding seasonings and spices and letting it mature. In Japan, it was produced and sold by Yamasa Shoyu in 1887 (Meiji 20). It became popular along with Western cuisine in the latter half of the Meiji period, and became so widespread that Worcestershire sauce came to mean sauce. In Japan, it is written as "Worcestershire sauce" and has a different flavor from the original. It is made by mixing various spices, sugar, salt, vinegar, amino acid seasonings, and caramel for coloring with the broth or puree of vegetables such as onions, carrots, tomatoes, and celery, and letting it mature for about a month. There are sauces with names that indicate the concentration of the sauce, such as thick or medium-thick, and sauces for different purposes, such as tonkatsu sauce, barbecue sauce, yakisoba sauce, and okonomiyaki sauce. In Europe and the United States, Worcestershire sauce is more commonly used for seasoning dishes and sauces, and in cooking, rather than for use at the table.

主として食卓用に使用されるソースの一種。1850年ごろイギリスのウースターシャー地方でつくり始められた食卓用ソースで、タマネギ、ニンジン、セロリなどの野菜を煮込み、調味料や香辛料を加えて熟成させたもの。日本では1887年(明治20)にヤマサ醤油(しょうゆ)が生産発売した。明治時代後半に西洋料理とともに普及し、ソースといえばウースターソースを意味するほどに広まった。日本では「ウスターソース」と表記され、原型とは違った風味のもので、タマネギ、ニンジン、トマト、セロリなどの野菜の煮出し汁やピューレに各種のスパイス類、糖類、食塩、酢、アミノ酸などの調味料類、着色のためのカラメルなどを混合、1か月くらい熟成させてつくる。粘性から、濃厚、中濃などの濃度を表す名のソースや、トンカツソース、バーベキューソース、焼きそばソース、お好み焼きソースなど、用途別のものもある。欧米ではウースターソースは、食卓用よりも料理やソースの味つけ用、調理用として使用されていることが多い。
