...There were various kinds of songs according to the process of sake brewing. For example, in the sake brewery songs of the Gogo region of Nada, on the north shore of Osaka Bay, which has the oldest history, there is the "Bucket Washing Song," which is about soaking the six-foot tubs and basin-shaped tubs called hangiri, which were used in the previous year, in hot water and washing them with a bamboo brush, also called "Autumn Washing" or "Washing Place Song." Next, there is the "Moto-suri Song," which is sung when steamed rice, koji, and water are placed in a hangiri tub to make the moto, and three or four people stir it with long paddles.
