糒(ほしい),餉(かれい)とも。糒の音はビで備に通じ,急に備える米の意。米を蒸して陰干ししたもの。水に浸したり湯をかけてもどして食べる。古くから携帯食,保存食とされた。道明寺糒はもち米によるもので,河内の道明寺で平安時代からつくられている。現在も菓子材料とされる。
