Foods in a ground state. There are various types, including meat, fish, fruits, and vegetables. The ingredients are ground, and those with a lot of moisture are concentrated, while those with little and hard moisture are adjusted to the appropriate viscosity by adding liquid. Many are processed into bottled or canned goods after cooking and seasoning. Meat examples include chicken paste (chicken meat) and liver paste (liver of beef, pork, chicken, etc.), fish examples include anchovy paste (salted fermented sardines), and vegetable examples include tomato paste. Other examples include almond paste and sesame paste. Various types of baby food, sea urchin paste, namemiso, and nori tsukudani (seaweed stew) are also types of paste. Paste can be used as is in canapes and sandwiches. It is also used as a base for sauces and as a seasoning for salads.

Among the doughs made by kneading flour with water, milk, butter, etc., those that are softer than bread or cake are called pastes. For example, choux pastry for cream puffs and crepe dough are called pastes.

すりつぶした状態の食品のこと。肉、魚、果物、野菜など各種のものがある。材料をすりつぶし、水分の多いものは濃縮し、少なくて固いものは液体を加え適度な粘度に調節する。加熱調理と調味をして瓶詰、缶詰に加工したものが多い。肉類ではチキンペースト(鶏肉)、レバーペースト(ウシ、ブタ、ニワトリなどの肝臓)、魚ではアンチョビーペースト(イワシの塩蔵発酵品)、野菜でトマトペーストがある。そのほか、アーモンドペースト、ごまペーストなどがある。また、各種のベビーフード、練りうに、なめみそ、海苔佃煮(のりつくだに)なども一種のペーストである。ペーストはそのままでカナッペやサンドイッチに用いる。また、ソースのベース、和(あ)え物など調味料としても用いられる。

 小麦粉に水や牛乳とバターなどを加えてこねた生地(きじ)のなかで、パンやケーキなどより柔らかいものをペーストとよぶ。たとえばシュークリーム用のシュー生地やクレープ生地をペーストという。
