It refers to vinegar. Its origin is a compound of the French words "vin" (wine) and "aigre" (sour). The ingredients used for vinegar vary by country, such as Japan (rice, sake lees), China (rice), France (grapes), and the United States and the United Kingdom (apples, alcohol). In Japan, Western-style vinegars are often named "vinegar." Commonly used vinegars are apple vinegar and wine vinegar. Vinegar made using alcohol is called white vinegar, and vinegar made using malt is called malt vinegar.

酢のこと。語源はフランス語のぶどう酒vinと酸っぱいaigreが合成されたもの。酢の原料は国によって特徴があり、日本(米、酒粕(さけかす))、中国(米)、フランス(ぶどう)、アメリカ・イギリス(りんご、アルコール)などがその例である。日本では、洋風の酢に対して商品名にビネガーをつける場合が多い。よく用いられているものにアップルビネガー、ワインビネガーがある。アルコールを用いた酢はホワイトビネガー、モルト(麦芽)を用いたものはモルトビネガーという。
