偶蹄(ぐうてい)目ウシ科。前6000年ごろからコルシカやサルデーニャにいるムフロンや，小アジアからアフガニスタンにいるアジアムフロン，中央アジアのアルガリなどを飼いならし家畜化したものといわれる。体には毛が密生し，多くのものは雄が角をもつ。角の基部断面はほぼ倒三角形。あごひげはない。消化力は強く粗食に耐え，反芻(はんすう)する。性質は温順で群居性が強い。乾燥した涼しい場所で飼育される。羊毛をとるほか，肉もマトンやラム（羊肉）と呼ばれて食用となり，乳は脂肪が多くて（６〜８％），飲用のほか，バター，チーズのよい原料となる。用途や産地によって多くの品種があるが，毛用，肉用，毛肉兼用，乳用，毛皮用に大別される。〔毛用種〕　メンヨウ（緬羊）という場合，一般にこれをさす。オーストラリア，米国など世界各地で飼育され，メリノー種が有名。〔肉用種〕　英国などで盛んに飼われ，リンカン種，サフォーク種，サウスダウン種などがあり，毛も利用される。〔毛肉兼用種〕　コリデール種などが知られ，ニュージーランド，米国などで広く飼われている。〔乳用種〕　ドイツ原産のオストフリージヤン種，フランス原産のラクーヌ種が有名。〔毛皮用種〕　カラクール種などがあり，カラクールの生後まもない子ヒツジの毛皮はアストラカンとして知られる。トルキスタン，ロシア，ナミビアなどで飼われる。
