Passion fruit - Passion fruit (English spelling)

A perennial vine in the Passifloraceae family (APG classification: Passifloraceae). Its Japanese name is Kudamonotokeisou (passifloraceous plant) because its fruit is edible. Native to Brazil. The leaves are palmately trifoliate and 12 cm across. The flowers grow singly in the axils of newly grown vines, blooming in the early morning and closing in the afternoon. The flower shape is similar to that of the passion flower, with five white petals and sepals. There are many thread-like coronas with purple bases. There are five stamens and one pistil, with a three-lobed stigma. The name "passifloraceous plant" comes from the flower shape resembling a clock face. The fruit is spherical or elliptical, 5-8 cm long. It turns blackish purple as it ripens, but there is also the yellow-colored Passifloraceous plant. It is mostly cultivated in Central and South America, but can also be grown in Okinawa. Related species include the fine granadilla, the large-fruited passionflower, and the high-altitude banana passion fruit.

The skin is brittle, 3 mm thick, and contains numerous seeds wrapped in milky white pulp. The pulp is juicy, sweet and sour, and aromatic. The fruit is eaten raw or processed. When eaten raw, the seeds wrapped in the pulp are eaten as is. It is processed exclusively for juice, and there are two methods: squeezing the juice with the skin on, or squeezing the juice only from the pulp after separating the seeds and pulp. The former method gives the juice the color of the skin and a bitter taste. The latter method produces a smaller yield but a distinctive yellow juice. After squeezing, it is immediately refrigerated, or pasteurized at high temperature (85°C for 5 minutes) or flash pasteurized to prevent deterioration. It can be consumed alone or mixed with apple juice or orange puree. 100 grams of raw juice contains 15.8 grams of sugar, 1400 micrograms of carotene, 780 IU of A-value, and an acidity of around 3.0.

トケイソウ科（APG分類：トケイソウ科）の多年生つる草。果実を食用とするため、和名をクダモノトケイソウという。ブラジル原産。葉は三叉(さんさ)状に分裂する掌状単葉で、横径12センチメートル。花は新生したつるの葉腋(ようえき)に単生し、早朝に開花、午後には閉じる。花形はトケイソウと同様で、花弁、萼片(がくへん)とも5枚で白色。基部が紫色の糸状の副花冠が多数ある。雄しべは5本、雌しべは1本で柱頭が三裂する。トケイソウの名は、この花形を時計の文字盤に見立てたもの。果実は球形または楕円(だえん)形で、長さ5～8センチメートル。熟すにつれて黒紫色となるが、別に黄色になるキイロクダモノトケイソウもある。中南米で栽培が多いが、沖縄でも栽培できる。近縁種に、品質のよいグラナディヤ、大果のオオミトケイソウ、高地にできるバナナパッションフルーツなどがある。

　果皮はもろく、厚さ3ミリメートル、中に乳白色のパルプに包まれた多数の種子がある。パルプは多汁で甘・酸味が適和し、芳香があって美味である。果実は生食および加工用とする。生食ではパルプに包まれた種子もそのまま食べる。加工はジュース専用で、果皮付き搾汁(さくじゅう)と、種子とパルプを分離してパルプのみからの搾汁の2方法がある。前者は果皮の色やえぐ味がつく。後者は収量は少ないが黄色の特徴あるジュースが得られる。搾汁後は変質を防ぐため、すぐ冷蔵するか、高温殺菌（85℃で5分）または瞬間殺菌する。単独で飲用するかリンゴ果汁やオレンジピューレなどと適宜混ぜて利用する。なお生果汁100グラム中には糖質15.8グラム、カロチン1400マイクログラム、A効果780IUを含み、酸度は3.0前後である。
