A sensation caused by the sense of smell. Usually, the word "smell" is used to describe a good smell and the word "odor" to describe a bad smell, but the quality of a smell is itself a very subjective sensation. For information on how we sense smell, please refer to the entry on "smell." In humans, olfactory stimuli are volatile substances in the air, and can be clearly distinguished from taste, which senses chemicals in a solution, but in aquatic animals, both stimuli come from the water, so the only way to distinguish them is by the type of receptor. Furthermore, in aquatic invertebrates, sensory organs that can be called olfactory or gustatory organs are not differentiated, and the two cannot be distinguished, so they are collectively referred to as chemical senses.

嗅覚によって生じる感覚。普通よいにおいには〈匂い〉,悪いにおいには〈臭い〉が使われるが,においのよしあし自体はきわめて主観的な感覚である。においを感じるしくみについては,〈嗅覚〉の項目を参照されたい。 ヒトでは嗅覚の刺激は空中の揮発性物質であって,溶液中の化学物質を知覚する味覚とはっきり区別できるが,水生の動物ではいずれの刺激も水中からくるので,受容器の別によって区別するしかない。さらに水生の無脊椎動物では,とくに嗅覚器,味覚器と呼べるような感覚器は分化しておらず,両者を区別できないので,化学感覚と総称される。
