Toji - Toji

Japanese: 杜氏 - とじ

Also called Toji. A craftsman engaged in sake brewing or the head of the group. In the past, sake brewing was the job of the housewife, the Toji, but in the early modern period, as commercial sake brewing began to take place in various regions, the work was organized by men. They relied mainly on winter servants in rural areas for labor, and became a group of people from the same hometown under the discretion of the Toji in charge. In various regions, there are the Tanba Toji, Tajima Toji, Echigo Toji, Nanbu Toji, and Izumo Toji. It was necessary to master special skills, and later it was established as a profession in itself.

トウジともいう。酒造りに従事する職人もしくはその総大将をいう。古くは一家の主婦である刀自 (とじ) の仕事であった酒造りが，近世に入ってから各地で営業用の酒造りが行われるようになると，その仕事は男たちの手で組織化された。おもに農山村の冬場奉公人にその労働力を頼り，その責任者である杜氏の裁量権による同郷人的集団となった。各地に丹波杜氏，但馬杜氏，越後杜氏，南部杜氏，出雲杜氏などが知られる。特別な技術を修得する必要があり，のちには一つの職業として成立した。
