A herbaceous plant of the Solanaceae family. Native to South America, it is widely cultivated from the tropics to the temperate zone. In the temperate zone, it is cultivated as an annual plant. Usually, the fruit ripens red and is used as a spice either raw or dried, and the young leaves are often edible as well. It is said to have been introduced to Japan by the Portuguese or brought back from Korea, and for this reason it is also called Nanban or Goryeo pepper. There are many varieties, and the spiciness varies greatly, but generally there are spicy varieties with thin, small fruits and sweet varieties with round, large fruits that are less spicy. Hot varieties include Tabasco, Yabusa, Takanotsume, and Hungarian Yellow Wax, and sweet varieties include Fushimi, Shishito, California Wonder, and Pimento. It is high in vitamins A and C, and its spiciness comes from a substance called capsaicin. The spicy variety is used raw or chopped into powder and used as an ingredient in sauces, curry powder, shichimi pepper, and other seasonings, as a skin irritant (poultice), and as a spicy stomachic, while the sweet variety is usually known collectively as bell pepper and is used as a vegetable in cooking.

ナス科の草本。南アメリカ原産で，熱帯から温帯にかけて広く栽培されている。温帯では一年草として栽培される。普通，果実は赤熟し，生のまま，あるいは乾燥して香辛料として用いられ，若い葉も食用とされることが多い。日本にはポルトガル人によって伝えられたとも，朝鮮から持帰られたともいわれており，このため，南蛮とか高麗胡椒などとも呼ばれている。種類が多く，辛みにも大きな差があるが，一般に細くて小型の果実をもつ辛み種と，丸くて大型の果実をもつ辛みの少い甘み種がある。辛み種としてはタバスコ，八房，鷹の爪，ハンガリーエローワックス，甘み種としては伏見，獅子唐，カリフォルニアワンダー，ピメントなどが知られている。ビタミンA，Cの含有量が高く，辛みはカプサイシンと呼ばれる物質である。辛み種のものは生果のまま，あるいは刻んで粉末にし，ソース原料あるいはカレー粉，七味唐辛子，その他の調味料，皮膚刺激薬 (ハップ剤) ，辛味性健胃剤に使われ，甘み種は通常ピーマンと総称され，野菜として料理に用いられる。
