In spinach, lettuce, cabbage, and other vegetables, many leaves grow densely on a very short stem with short internodes, but when flower buds differentiate at the growing point, the stem (flower stalk) bearing the flower buds eventually elongates and the leaf internodes also become longer. This phenomenon is called bolting, or "bolting." When this occurs, leafy vegetables do not form heads, and root vegetables stop growing roots, making it impossible to produce anything of commercial value. ホウレンソウ,レタス,キャベツなどでは,通常,ごく短い茎の上に多数の葉が密生し節間が短いが,生長点部に花芽が分化すると,やがて花蕾(からい)をつけた茎(花茎,とう)が伸長し,葉の節間も長くなる。この現象を抽だいといい,〈とう立ち〉ともいう。これが起こると,葉菜類では結球しなかったり,根菜類では根の肥大が停止して,商品価値のあるものを生産できなくなる。しかし種子の収穫が目的の採種栽培では,抽だいさせることが必要である。
