Japanese: 脱脂ダイズ(脱脂大豆) - だっしだいず（英語表記）defatted soybean meal

Whole soybeans or dehulled soybeans are flaked after adjusting the temperature and humidity, and then defatted. They usually contain less than 1% oil. In factory production, n -hexane is used as a solvent, and defatting is generally done using a continuous horizontal extractor. To remove the solvent, a desolvation/roaster machine is used for those that require complete heating, and a flash type desolvation device, deodorizing stripper device, or steam desolvation/vacuum deodorization device is used for those that do not tolerate thermal denaturation. According to the degree of thermal denaturation, they are classified as (1) undenatured, (2) low-temperature denatured, and (3) high-temperature denatured.

丸ダイズあるいは脱皮ダイズの温湿度を調整後フレーク化し，ついで脱脂加工をしたもので，通常1％以下の油を含有する。工場製造には，n‐ヘキサンを溶媒とし，一般には連続水平式抽出機を用いて脱脂する。溶剤をとり除くためには，完全加熱を要するものは脱溶剤兼焙焼（ばいしよう）機，熱変性を嫌うものはフラッシュ式脱溶剤装置，脱臭ストリッパー装置，蒸気脱溶剤真空脱臭装置などが用いられる。この熱変性程度に準じて，(1)未変性，(2)低温変性，(3)高温変性に分類される。
