Sorel
Sorrel is known as a spring wildflower in Japan, growing naturally along rice field paths. Its Japanese name is " suiba" or "sukanpo" because it tastes sour when chewed.
Sorrel is characterized by its high content of vitamin C. The main functions of vitamin C are strengthening the immune system and preventing rough skin and pigmentation.
External use: For athlete's foot and ringworm, apply vinegar to the affected area, followed by the juice of fresh roots.
Sorrel is commonly used to flavor dishes , taking advantage of its sour and slightly bitter taste, and is particularly popular in French sauces, salads, and stews.
However, be careful when cooking with an iron pot as it will give off an unpleasant metallic smell. Also, because it contains a lot of oxalic acid, eating it raw or ingesting large amounts over a long period of time can cause kidney stones .

日本でも田のあぜ道などに自生しており、春の野草として知られるソレル。かむと酸っぱいことから、和名を「酸葉(すいば)」「スカンポ」といいます。
 ソレルは多量のビタミンCを含むのが特徴です。ビタミンCのおもな働きは、免疫力の強化や、肌荒れ、色素沈着の防止などです。
○外用としての使い方
 水虫やたむしには患部に酢を塗ったあと、新鮮な根の絞り汁をつけると効果があります。
○食品としての使い方
 ソレルは、その酸味とほろにがさを生かして、料理の風味付けに使うのが一般的。とくに、フランス料理のソース、サラダ、煮込みなどでよく使われます。
 ただし、料理の際に鉄の鍋を使うと不快な金属臭がでるので注意。また、シュウ酸を多く含むので、生食したり、多量に摂取を続けると結石(けっせき)の原因になります。
