Sorrel is known as a spring wildflower in Japan, growing naturally along rice field paths. Its Japanese name is " suiba" or "sukanpo" because it tastes sour when chewed. Sorrel is characterized by its high content of vitamin C. The main functions of vitamin C are strengthening the immune system and preventing rough skin and pigmentation. External use: For athlete's foot and ringworm, apply vinegar to the affected area, followed by the juice of fresh roots. Sorrel is commonly used to flavor dishes , taking advantage of its sour and slightly bitter taste, and is particularly popular in French sauces, salads, and stews. However, be careful when cooking with an iron pot as it will give off an unpleasant metallic smell.
