A type of mint. There are many types of mint, but the leaves of spearmint and peppermint are used as spices. They have a stronger fragrance than Japanese mint and a slightly sweeter taste. They are used in lamb and mutton dishes, meat and fish soups, as well as cocktails and jellies.
