Salmon and trout ovaries, and their salted preservation. In the past, they were called "hararago", "harara" or "amako", but now they are also called "suzuko". Ikura is made by breaking apart the ovarian membrane and breaking up the roe into pieces. There are two ways to salt the ovaries: washing them to remove any dirt, and immersing them in saturated salt water, or sprinkling them with salt. The former is the most common method. A good product is one that is naturally vermilion in color, elastic, and has firm roe. It has been highly valued since ancient times, and the Engishiki records that it was presented as tribute from Shinano, Echizen, Etchu, Echigo, and other areas under the name "sakeko".

サケ，マスの卵巣，およびその塩蔵品。古くは〈はららご(鮞)〉〈はらら〉〈甘子（あまこ）〉とも呼び，現在は〈すずこ〉とも呼ぶ。卵巣膜に包まれたままのもので，卵粒をほぐしてばらばらにしたものがイクラである。塩蔵には，卵巣を洗って汚れを除き，飽和食塩水に浸漬（しんし）する方法と塩をふる方法とがあり，おもに前者が行われている。自然な朱色で，弾力性があり，卵粒のしっかりしたものが良品である。古くから珍重されたもので，《延喜式》には〈鮭子〉の名で信濃，越前，越中，越後などから貢納されていたことが見える。
