In the Middle Ages, the monks who provided vegetarian foods to the emperor were appointed to the vegetable gardens called shojin-misono (vegetable gardens) by the Kengyo-shiki (police inspectors) and Sokan-shiki (general officials). The monks are thought to have included cucumbers, lotus roots, bamboo shoots, natto (fermented soybeans), konnyaku (sea jelly), karako (flour), and somen (noodles). Their origins can be traced back to the Garden and Pond Office (Sonoto), which was in charge of vegetables and fruits, and the Daizen-shiki (Zenbu), which was in charge of sweets, rice cakes, and other common foods in the Imperial Household Ministry under the Ritsuryo system. 中世,精進食品を天皇に備進した供御人。そのための菜園である精進御薗(みその)には,検校職(けんぎようしき),惣官職が補任されて供御人を統率した。精進供御人の中には,黄瓜(きうり)供御人,蓮根(れんこん)供御人,竹子(たけのこ)供御人,唐納豆(からなつとう)供御人,蒟蒻(こんにやく)供御人,唐粉(からこ)供御人,索麵(そうめん)供御人などが含まれたと思われ,その源流は,律令制下宮内省で蔬菜樹果のことをつかさどった園池司(園戸)や,菓餅庶食のことをつかさどった大膳職(膳部)にあったらしい。
