The name of sawara changes as it grows, and when it grows to about 40cm it is called "sagoshi" in Kansai, Shikoku, and Kyushu, and "sagochi" in Kanto. When it grows, sawara is a large fish that is long and slender and can reach a total length of 1m. It is in season from October to March, but by April it will have eggs and its flavor will deteriorate.
Sawara caught in autumn in Suruga Bay or Nishiizu is called "autumn sawara," while that caught in winter is called "cold sawara."
○ Nutritional value: Sawara is rich in potassium. Potassium counters the harmful effects of salt and has the effect of lowering blood pressure, preventing hypertension. It also helps and regulates the function of the heart and muscles.
It also contains vitamins _B2 and D. _B2 protects mucous membranes and promotes healthy skin, hair, and nails. It is also effective against stomatitis, angular cheilitis, bloodshot eyes, and rough skin. It also breaks down lipid peroxides, helping to prevent arteriosclerosis, high blood pressure, and strokes .
Vitamin D increases the absorption of calcium and phosphorus.
Fresh sawara can be eaten as sashimi, but be careful as it may contain parasites. It is best served grilled with salt, teriyaki, grilled in foil, steamed, meunière, or fried.

《栄養と働き＆調理のポイント》

　サワラは成長とともに名前がかわり、40cmくらいを関西・四国・九州では「サゴシ」、関東では「サゴチ」と呼びます。サワラは成長すると細長い形で全長1ｍにもなる大型魚。旬(しゅん)は10月から3月くらいまで、4月になると子をもつので味が落ちます。
　駿河湾(するがわん)や西伊豆(にしいず)で秋にとれたサワラを「秋ザワラ」、冬にとれたものを「寒ザワラ」と呼んだりします。
○栄養成分としての働き
　サワラは、カリウムが豊富に含まれているのがポイント。カリウムは塩分の弊害をカバーし、血圧を下げる効果があるため、高血圧を予防します。また心臓機能や筋肉機能の働きを助け、調整します。
　ビタミンB₂、Ｄも含まれています。B₂は、粘膜(ねんまく)を保護し、健康な皮膚や髪、爪をつくり、成長をうながします。また、口内炎(こうないえん)や口角炎(こうかくえん)、目の充血といった症状や、肌荒れにも有効。さらに過酸化脂質を分解して動脈硬化、高血圧、脳卒中(のうそっちゅう)などの予防に役立ちます。
　ビタミンＤはカルシウムとリンの吸収を高めます。
　新鮮なサワラは刺身にできますが、寄生虫がいることがあるので、要注意です。塩焼き、照り焼き、ホイル焼き、蒸しもの、ムニエル、フライなどの料理に適しています。
