There is no strict definition, but it generally refers to foods made purely physically and chemically from inorganic substances such as petroleum, without the use of living organisms as a medium. Synthetic vinegar is an example. Attempts to use industrial power to produce food from water and air began in Europe in the 19th century. The technology to fix nitrogen in the air and produce ammonia was invented during this process. Microorganisms such as yeast efficiently produce organic proteins and carbohydrates from inorganic nitrogen and carbon. 厳密な定義はないが,一般には生物体を媒介としないで石油など無機物から純粋に物理化学的に作る食品をいう。合成酢などがその例である。工業の力を利用し,水や空気から食料を製造する試みは19世紀のヨーロッパで開始された。空気中の窒素を固定しアンモニアを作る技術もその過程での発明である。酵母のような微生物は,無機物の窒素や炭素から有機物のタンパク質や炭水化物を効率的に生産する。この酵母を肉状に加工する技術はすでに完成しており,半合成食品といえよう。
