洋生菓子、フルーツケーキ、バターケーキなどのこと。日本では洋菓子全般をさすことが多いが、イギリスおよびヨーロッパ諸国では、cakeは特定の種類の菓子を意味することが多い。すなわち、バター、砂糖、鶏卵、小麦粉および木の実や乾燥果実などを主原料としてつくる、スポンジ状組織をした比較的日もちのよい菓子をいう。代表的なものにプラムケーキ、シムネルケーキ、マデラケーキ、パウンドケーキなどがある。フランス語ではガトーgâteau(x)、ドイツ語ではクーヘンKuchenに相当する。菓子の総称はコンフェクショナリーconfectioneryとかペイストリーpastryというべきで、ケーキはその一分野である。
