A marine fish belonging to the order Perciformes and family Sableidae. It is found in a wide range of habitats, from the Pacific Ocean north of Kumano-Nada, the Kasumi area of ​​Hyogo Prefecture, the Sea of ​​Okhotsk, the Emperor Seamounts, the North Pacific Ocean, and even northern California. Its body is thickened, and its head is round and lacks spines or protuberances, giving it a shaved appearance. It is easily distinguished from the closely related Sable, as its two dorsal fins are close together and its anal fin is smaller than the second dorsal fin. Adult fish are uniformly dark gray in color with no noticeable markings, but juveniles have white horizontal stripes and irregularly shaped small white spots on their sides. Juvenile fish gather on floating objects in the surface, while adults live in rocky areas up to a depth of 680 meters, and are caught with deep-sea longlines and trawls. It can grow to over 180 cm in length and weigh up to 90 kg. It is in season in winter and is delicious when teriyaki, simmered, or pickled in miso. Because it is high in fat, eating too much of it can cause diarrhea.

硬骨魚綱スズキ目ギンダラ科に属する海水魚。熊野灘以北の太平洋、兵庫県香住(かすみ)地区、オホーツク海、天皇海山列、北太平洋から北部カリフォルニアにまで広く分布する。体は肥厚し、頭は丸くて棘(とげ)や隆起がないので坊主頭を連想させる。2基の背びれが近接し、臀(しり)びれは第2背びれより小さいことで、近縁種のギンダラと容易に区別される。体色は成魚では一様に暗灰色で、顕著な斑紋(はんもん)はないが、幼魚では体側に白色の横縞(よこじま)や不正形の小白色斑紋がある。幼魚は表層の浮遊物に集まるが、成魚は水深680メートルまでの岩礁域にすみ、深海延縄(はえなわ)やトロール網で漁獲される。全長180センチメートル以上、体重90キログラムにもなる。旬(しゅん)は冬季で、照焼き、煮つけ、みそ漬けにすると美味。脂肪分が多いので食べすぎると下痢をすることがある。
