An essential oil. Also called aniseed oil. When the ripe fruits of this parsley plant native to Egypt and the Near East are steam distilled, the oil yield is 1.5-6%. It is a pale yellow syrup with a sweet, distinctive fragrance, solidifies at temperatures below 15°C, and contains anethole (80-90%) as its main component. It is used to flavor soaps and pomades, and is particularly useful as a flavoring for liqueurs and as a medicine.

精油の一つ。アニシード油aniseed oilともいう。エジプト、近東地方原産のセリ科植物の熟した果実を水蒸気蒸留すると収油率1.5~6%で得られる。これは淡黄色シロップ状で、甘い特有の香気を有し、15℃以下で固化し、主成分としてアネトール(80~90%)を含有している。せっけんおよびポマードの付香に用い、とくにリキュールの調香料および医薬としての用途が大きい。
