An essential oil. Also called aniseed oil. When the ripe fruits of this parsley plant native to Egypt and the Near East are steam distilled, the oil yield is 1.5-6%. It is a pale yellow syrup with a sweet, distinctive fragrance, solidifies at temperatures below 15°C, and contains anethole (80-90%) as its main component. It is used to flavor soaps and pomades, and is particularly useful as a flavoring for liqueurs and as a medicine.
