According to the Bankin Sugiwaibukuro (1732), Kitakaze vinegar was considered the best vinegar in Edo, and around the Keian period (1648-52), the price tag of a liquor store in Edo listed 1 sho of vinegar at 48 mon per sho compared to 28 mon per sho for Owari vinegar, which was the name for the Hyogo vinegar from Settsu.
