Galactose

A type of aldohexose (hexose) that rarely exists in free form in nature. It is a sweet white powder. There are D- and L-types. D-galactose is widely distributed throughout the living world, and is found in lactose (milk sugar), agar, galactomannan, polysaccharides and glycoproteins in bacterial cell walls, glycolipids, etc. L-galactose is more narrowly distributed, and is found in agar, the jelly on the surface of some types of sea urchin eggs, and polysaccharides in snail mucus. Therefore, D-galactose is generally simply called galactose.

D-galactose is obtained by hydrolyzing lactose with acid. In other words, if the hydrolysate is concentrated and left in a refrigerator, D-galactose crystals will form. D-galactose is one of the physiologically important sugars, and is not only a component of lactose, but also a wide variety of compounds contain it, such as glycolipids, which are found in large quantities in the brain and nervous tissue. For example, the ABO blood type is determined by the glycoproteins and glycolipids on the surface of red blood cells. In the case of type B red blood cells, the end of the sugar chain for blood type B is galactose. If this galactose is separated by an enzyme called α (alpha)-galactosidase, the red blood cells lose the properties of type B and begin to show the properties of type O.

Galactose taken into the body is converted to UDP (uridine diphosphate)-galactose by the action of an enzyme called galactose-1-phosphate uridyltransferase, and is then used in various ways. If this enzyme is genetically absent, galactose is not utilized and accumulates in the blood, causing a decline in intelligence and other symptoms. This disease is called galactosemia.

D-type lactose is a component of lactose along with D-glucose. It is also a component of glycolipids (cerebrosides and gangliosides) in the brain and other glycoproteins that make up cell membranes. It is synthesized from glucose in the human body, but in infants it is supplied in the form of lactose in milk to synthesize brain components. It is converted to glucose in the body and used as a source of calories. It is also found in the polysaccharides that make up the cell walls and cell membranes of plants and microorganisms, and in these cases there are L-type and D-type lactose.

アルドヘキソース（六炭糖）の一種で、自然界には遊離の状態で存在することはほとんどない。白色の粉末で甘い。D型とL型がある。D-ガラクトースは広く生物界に分布し、ラクトース（乳糖）、寒天、ガラクトマンナンや細菌細胞壁の多糖および糖タンパク質、糖脂質などに含まれる。L-ガラクトースは分布が狭く、寒天やある種のウニ卵の表面のゼリー、カタツムリの粘液の中の多糖などに含まれている。したがって、一般にはD-ガラクトースを単にガラクトースとよぶ。

　D-ガラクトースはラクトースを酸で加水分解すると得られる。すなわち、加水分解物を濃縮して冷蔵庫中に放置すれば、D-ガラクトースの結晶が生ずる。生理的に重要な糖の一つで、ラクトースの構成成分であるばかりでなく、脳や神経組織に多量に分布する糖脂質など、これを構成成分とする化合物は広く存在する。たとえば、ABO式の血液型を決定しているのは、赤血球表面の糖タンパク質や糖脂質である。B型の赤血球の場合、血液型の糖鎖の端はガラクトースである。このガラクトースをα(アルファ)-ガラクトシダーゼという酵素で切り離してしまうと、赤血球はB型の性質を失い、O型の性質を示すようになる。

　生体内に取り込まれたガラクトースは、ガラクトース-1-リン酸ウリジルトランスフェラーゼという酵素の働きでUDP（ウリジン二リン酸）-ガラクトースになり、いろいろと利用される。この酵素が遺伝的に欠けていると、ガラクトースが利用されずに血液中に蓄積され、知能の低下などを引き起こす。この疾患をガラクトース血症とよぶ。

　D型はD-グルコースとともに乳糖の構成成分である。また脳に含まれる糖脂質（セレブロシドやガングリオシド）やそのほか細胞膜構成糖タンパク質の成分でもある。人間の体内でグルコースから合成されるが、乳幼児では脳成分合成のため、ミルク中の乳糖の形で供給される。体内でグルコースに変わり、カロリー源として利用される。植物や微生物の細胞壁や細胞膜の構成多糖類中にも含まれるが、このときL型とD型が存在する。
