Katauo

…A marine fish of the Scombridae family (illustration). The name katsuo is said to have been derived from the name "katauo" (hard fish) because the flesh becomes hard when cooked or dried, as the fish loses freshness rapidly. Its English name is skipjack, which comes from the way it jumps around.
