This refers to the eggs of the common octopus or salted versions of them. A specialty of Akashi City, Hyogo Prefecture. The name was given because the eggs are connected together, reminiscent of wisteria flowers. The eggs laid in octopus traps and other traps are salted and then desalted in running water before use. They are primarily used in clear soups and vinegared dishes (sanbaizu), and are enjoyed by gourmets. Taurine is also extracted from the broth, and is used for medical purposes.
