After World War II, the high economic growth period of the 1960s saw a rapid increase in the number of people eating out, due in part to increased employment, and in the 1970s, American capital, which sold so-called fast foods such as hamburgers, fried chicken, and donuts, arrived in Japan, stimulating the family restaurant and other food service industries to flourish, and a major change was seen in Japanese people's attitudes toward their eating habits. …

…つまり，1907年に東京日本橋の三越が食堂を開業したのを契機に，大正も中ごろになると公営の簡易食堂が設置され，さらに関東大震災後はいわゆる大衆食堂の元祖として須田町食堂が開店したのをはじめ，各種の飲食店が急増し，日本人の手で開発されたカレーライスやとんかつなどの日本的洋食を売物に，多くの都市民を外食に誘ったのであった。　ただし，こうした食事形態を総称して外食と呼ぶようになったのは，41年4月戦時下食糧統制の一環として，米穀配給通帳制とともに外食券制が実施され，ちまたに外食券食堂の表示が見られるようになってからのことである。第2次大戦後，60年代の高度成長期に入ると，雇用増大などの要因もあって外食人口は急増し，70年代に入るとハンバーガー，フライドチキン，ドーナツなどのいわゆるファースト･フードのアメリカ資本の日本上陸が行われ，その刺激によってファミリー･レストランその他の外食産業が隆盛をきわめるようになり，食生活に対する日本人の意識にも大きな変化が見られるようになった。…
