It is believed to have originated in Central Asia and has been widely cultivated since ancient times as an important vegetable. It grows to about one meter in height. It has long, fleshy, juicy white roots underground. The leaves grow in clusters and are covered with thorn-like hairs. The leaf blade is pinnately divided, and each lobe is egg-shaped elliptical with coarsely toothed edges. In spring, a flower stalk grows between the leaves and a cluster of pale purple-white cruciform flowers blooms. After flowering, it produces an oblong fruit 4-6 centimeters long with wings, inside which lie black-brown, flattened, spherical seeds.
