It is believed to have originated in Central Asia and has been widely cultivated since ancient times as an important vegetable. It grows to about one meter in height. It has long, fleshy, juicy white roots underground. The leaves grow in clusters and are covered with thorn-like hairs. The leaf blade is pinnately divided, and each lobe is egg-shaped elliptical with coarsely toothed edges.
