The most pathogenic of all staphylococci. A common bacterium, it is the cause of wound suppuration. When it grows in food, it produces a toxin (enterotoxin). This toxin is heat-resistant, so food poisoning can occur even if the food is heated. The onset of illness is short, occurring one to four hours after eating, and symptoms include nausea, vomiting, abdominal pain, and diarrhea. ブドウ球菌のうちで最も病原性の強いもの。常在している細菌で,傷口の化膿 (かのう) の原因となる。また,食品中で繁殖すると毒素 (エンテロトキシン) をつくる。この毒素は耐熱性のため,加熱しても食中毒を起こす。発病は食事をしてから1~4時間後と短く,症状は吐き気,嘔吐 (おうと) ,腹痛,下痢などである。一般に症状は軽く,1,2日で回復する。
