There are two types, Shiokara natto and Itohiki natto, and when people simply say natto, they are usually referring to the latter in the Kanto region and the former in the Kansai region. The name Shiokara natto appears in the late Heian period's Shin Sarugaku-ki, but it is said to be a type of Kuki that was brought over from China long ago and was made by the Daizensho (cooking staff) of the Imperial Household Ministry from the Nara period onwards. …
