Strawberry white

…The Shojin Kenritsū (1819-24) lists more than 10 types of dishes, many of which are still being made today. Many of them are made by grating the kuwai with a grater, adding a little salt, rolling them into small balls and frying them in oil (ichigo wai), grating the kuwai with Asakusa nori seaweed and frying it, then cutting and stewing it (minato kuwai), grating the kuwai with steam and grinding it, seasoning it with sugar and salt, frying it in an omelette pan, sprinkling poppy seeds and sesame seeds on it and cutting it (matsukaze guwai), grating the kuwai with a light salt seasoning, steaming it, wrapping it in nori seaweed and cutting it into small pieces (kuwai sushi), and grating the kuwai with wheat flour, grinding it together, adding ginkgo nuts and walnuts, frying it in oil and then stewing it (kuwai hiryouzu). Kuwai Senbei is supposed to be made by slicing it thinly and roasting it over a fire, but it seems that it would be better to fry it like potato chips and sprinkle salt on it.

…《精進献立集》(1819‐24)は10種にあまる料理を記載し，なかには現在行われているものも少なくない。おろし金でおろして使うものが多く，おろして塩を少し入れ，小さな粒にまるめて油で揚げるのが〈いちごくわい〉，おろしたものを浅草ノリに塗りつけて揚げ，それを切って煮るのが〈みなとくわい〉，おろしたものを蒸してすり，砂糖･塩で調味して卵焼鍋で焼き，ケシの実･ゴマを振って切るのが〈松風ぐわい〉，おろしたものをうすい塩味にして蒸し，それをノリ巻にして小口切りするのが〈くわい鮨〉，おろしたものに小麦粉を加えてすり合わせ，ぎんなん，クルミなどを加えて油で揚げてから煮込むのが〈くわいひりょうず〉といったぐあいである。〈くわいせんべい〉は薄切りにしたものを火であぶるとしているが，これはポテトチップ風に揚げて塩を振るのがいいようである。…
